Back in May, my friend Kate from Living Lark graciously agreed to create a signature drink for our guests at the Beach Cabin this summer! So, one gray and cold Monday (as we do in Michigan), we got together at the Beach Cabin and she brought all of my favorite flavors and seamlessly created three beautiful and delicious drinks. It really was quite awe-inspiring! You’ll have to follow her here to get recipes to the other drinks because I can’t quite remember what was in them all. Kate and I have met only twice before but have been Instagram friends for a long time (since our mutual friend, Emily, introduced us!)! After our morning of simple syrup making and drink mixing, my face hurt from laughing and smiling so much. Of course, we both have almost 10 year old cameras and of course we both forgot to fully charge the batteries. So, we kept switching between cameras. Charging the cameras. Chopping ginger. Stirring simple syrups. Catching Up. You get the picture. Oh, and, for whatever reason, neither the Beach Cabin freezer nor our home freezer have ice makers. Ice was at a minimum to say the least- haha! Nonetheless, I think it all turned out quite fantastically!

But back to the Beach Cabin Cucumber Fizz. I can’t remember what I had shared with Kate. I think I mentioned that I like cucumbers, a little spice, and a little sour. I tend not to love super sweet drinks. With all of that vagueness, she created my most favorite drink ever! I also love that it is versatile and can be either a mocktail or a cocktail!

I’d say that the hardest part of the recipe is making the ginger simple syrup. Even that isn’t terribly hard. You don’t even have to peel the ginger- yay!!! You just have to be patient and not forget that it is simmering for about 45-minutes. Even if you don’t know what you’re doing (i.e., me in the photo below), it will likely turn out wonderfully!

Then, you let the syrup cool, strain it, and mix in the grapefruit juice. If you want to make it easy on yourself, you can just buy Simply Orange’s Grapefruit Juice. Easy Peasy, Not a Bit Squeezy. Or, if you’re feeling particularly fancy, you could squeeze your own.

If you’re having a large party, one option could be to mix the ginger simple syrup, grapefruit juice, and cucumber vodka (if using) together in a gallon jug or a dispenser and store it in your fridge. When your guests arrive (or maybe a minute or two before) add the Ginger Beer and serve over lots of ice with a ginger or lime garnish. You could also have only the ginger simple syrup, grapefruit juice, and vodka in the dispenser and let people add their own ginger beer. (Can you tell that I like my drinks fizzzzzzy?!). If you are going the mocktail route, one way to possibly incorporate the cucumber flavor, could be to add sliced cucumber to the dispenser/gallon glass jug at the same time as the simple syrup and grapefruit juice. Then, let it sit to combine for a bit prior to adding the ginger beer and serving.

Beach Cabin Cucumber Fizz: The Recipe

Anyway, here is the recipe! Enjoy!!! And I feel like I need that clause that says Drink Responsibly. So, Drink Responsibly. Also, this recipe is meant to serve 20 people. But, it is easy to cut into half for 10 people or even fourth-ed for 5 people. You get the picture. Okay, now here is the recipe!

The Perfect Summer Cocktail- a little spicy, a little sour, and whole lot of deliciousness! You will want to try this!!!

Ingredients
  • ⅓ cup fresh ginger chopped fine (no need to peel!)
  • 4 cups of water
  • 1.5 cups of white sugar
  • 5 cups of pink grapefruit juice (52 fl. oz. of Simply Orange Grapefruit Juice is a favorite if you can't squeeze your own)
  • 5 cups of ginger beer (buy two 25.4 fl. oz. Ginger Beer)
  • 2 bottles Prairie Organic Cucumber Vodka (750 mL bottles)
  • 1 thinly sliced lime or chunk of ginger for garnish
Instructions
  1. Ginger Syrup: Combine chopped ginger water, and sugar in a saucepan over medium heat. After the mix reaches a rolling boil, turn the heat to low and simmer for 45 minutes. Turn off the heat and place a fine mesh sieve over a 4-cup glass measuring bowl with lip. Carefully, pour ginger syrup over sieve until saucepan is empty. Discard ginger solids, rinse saucepan with water, and pour ginger syrup back into saucepan. Repeat the process, straining syrup over sieve again into measuring bowl.
  2. Beach Cabin Cucumber Fizz Concentrate: Combine 4 cups ginger syrup with 5 cups pink grapefruit juice. Pour into a pretty jar when ready to serve, combine with 5 cups ginger beer and the optional 7 cups of cucumber vodka. Serve over lots of ice with a garnish of fresh lime or a chunk of ginger.
